Party Chicken Salad

I'm always looking for the best chicken salad sandwich.  If I see it on a menu, I'm going to order it.  There are a couple places I would highly recommend for their chicken salad (a post for another time), but I wanted to share the best homemade version that you can make for yourself.  A dear friend and mentor that I've known for 20 years gave me this recipe one year after she made it as a birthday meal for me.  I'm going to share the full recipe that will make about 12 sandwiches.  I usually cut the recipe in half and I highly recommend that if you're only making it for one or two people.  The absolute best way to eat it (in my opinion) is to put it on Pepperidge Farm's Homestyle Oat bread.  The blend of flavors of the bread and the chicken salad are a perfect combination.  Also, I chop all the ingredients into small pieces and use red seedless grapes.  The beauty of this recipe is that you can prepare it however you like best and it will taste the same regardless.  Enjoy!

 

Party Chicken Salad Ingredients: 

4 cups cubed, cooked chicken 

1 cup halved, seedless grapes

1 cup water chestnuts, drained and chopped

1/2 cup chopped celery

1 (10 ounce) package slivered, toasted almonds

1 teaspoon salt

1/4 teaspoon pepper

1/2 cup mayo

1/2 cup sour cream

3 tablespoons honey

 

Directions:

Combine the first 7 ingredients.  Add honey, mayo, and sour cream. 

Mix thoroughly and chill.  It tastes even better if it sits a little while in fridge!
