Crockpot Chicken and Dumplings

Southerners are not typically known for choosing canned biscuits over homemade.  However, there are some days when you just want an easy meal that requires little to no prep.  This recipe is for a such an occasion.  Crockpot Chicken and Dumplings are easy to make and fill the house with a smell that can only be described as comforting.  The mix of onion, parsley, and chicken create the perfect comfort food that you will crave again and again.  Once you try this delicious dish, you'll soon be adding it to your weekly dinners.  

 

Ingredients:

- 2 cups chicken broth

- 1 lb. chicken breast cut into chunks (we like Perdue)

- 2 Tablespoons dried minced onion

- 1 Tablespoon dried parsley

-2 cans cream of chicken

- One 7.5 oz. can of refrigerated biscuits *don't use the flaky kind. We like Pillsbury and typically buy an extra can so that we have extra for dipping!*

 

Directions:

- Place broth, chicken chunks, onion, parsley, and cream of chicken into crockpot.

- Cook on high for 3 to 4 hours.

- Cut each biscuit into 8 pieces.  Stir mixture (this is also when i take the chicken chunks out and shred them, then put them back in the crockpot. If you like chicken in chunks then skip the shredding), then sprinkle biscuits on top of mixture. Place lid back on crockpot. 

- Cook an additional 30 minutes and serve.

 

This will serve 2 to 3 people but can be doubled easily.
